Here’s an easy way to sneak in vegetables in your kid’s plate!
I just used veggies that I already have on hand: onion, bell pepper, tomato, celery, string beans and potato. You may also use carrots, zucchini, raisins… the possibilities are endless!
Slice everything up in small dices. Mix well. I opted not to put salt, just a dash of oregano and pepper.
In another bowl, beat 2 eggs. Again, I did not put salt.
To put it together, I scooped around 1 tablespoon of the veggies into a cupcake tin. Followed by 2 tablespoons of the beaten egg. Top with grated cheese.
Put in a pre-heated (180°C) oven for 25-30 minutes. I must remember to use a non-stick spray next time.
This is good with rice or bread. But we ate it on its own! Z had 2 pieces so I think it was a success!
Whipping something up in the kitchen destresses me. More if the people who tasted my cooking loved it!
I confess… I’ve been addicted to this since I bought one at Baker’s Fresh in Shangri La Mall. It has been our snack after Z’s Kindermusik Class every Saturday. So to save a few pesos, I bought 100 grams of pork floss from Aji Ichiban and decided to make my own! Been munching on this for 2 weeks now!
